Chef Training at Lifehouse

Our Head Chef, Ugo Simonelli, is not only an extremely skilled cook, he has also trained lots of young, up-and-coming chefs over the years who have gone on to work at prestigious restaurants all around the world.

He is known for hiring candidates with passion and enthusiasm who are willing to learn, even if they don’t have much experience. They come to Ugo straight after culinary school and he makes sure they learn the basics before tackling more complicated techniques. Many stay with him for three to four years before moving on to their next challenge.

Ugo believes that the most important skills for any young chef to have are respectfulness, modesty, cleanliness, and the ability to work well as part of a team. They should be humble, absorb as much knowledge from others in the industry as possible, and never be afraid to ask questions.

A few chefs that Ugo helped to train at Lifehouse have now moved onto reputable London eateries, like Dinner by Heston Blumenthal and The Lanesborough.
